Hello new friends (and old friends, too)! I have a request - what are your favorite freezer recipes? Stuff that can be cooked in a big batch, portioned out, and then reheated (ideally in a microwave, I'm impatient). Stuff meant to go on rice or pasta is also fine. I'm a fairly adventurous eater, and have no dietary restrictions (and while I am weirdly picky about some stuff, that's sort of hard to pin down in a short post, and who knows, maybe someone else will find their new favorite recipe in one that isn't for me).

Here's one in return - Creamy Chicken Enchiladas. They're great fresh, but they also freeze and reheat super-well.

@cocoa This has long been one of my freezer staples -- on nights when I don't feel like cooking, I'll put it on top of rice alongside some broccoli or stir-fry veg. https://justbento.com/handbook/johbisai/basic-meat-soboro

@cocoa Lurou is a decent one. Here’s a random recipe I found online that’s close enough to my family’s: https://cookinginchinglish.com/authentic-lu-rou-fan/

You can also use an Instant Pot, but the recipes I’ve found online for that involve soy sauces I do not own. I will usually pair with tea-braised eggs or braised tofu puffs (other great things to make in a batch and throw in the fridge). Actually I make tea eggs whenever I have expired eggs bc I can just have them with every rice-based meal, lmao.

@amatsuki@mastodon.social I don't have an instant pot anyway, so it doesn't matter XD Not sure I can get the vegetarian oyster sauce, but I suppose I don't have anything to compare it to so it'll probably be fine. Looks tasty!

@cocoa I have definitely gotten away with braising without the oyster sauce. Just throw more spices in!

@amatsuki@mastodon.social grocery store had no pork belly last night (apparently Wednesday is their delivery day - but it was nuts enough yesterday), so I may go to the Korean grocery store next week and I can check.
